I have a multi-tenant environment where I’ve done configuration via a file instead of the environment variables. We’ll be deploying with Kubernetes but most of the examples I see include setting the environment variables for things like the database information. In order to deploy this to production, do I have to create my own docker image and deploy that if I want to use the cube.js configuration file instead?

You should be able to do that but the best practice would be using env vars. Mostly for security and practical reasons. E.g. if credentials change you can just restart the container with the new vars instead of rebuilding the entire container.
